Business Profile of the Week: Viva Mexico

The Business Profile spotlight this week is on our beloved Flemington family-owned and run, Mexican restaurant Viva Mexico! Librado has been in business for over 21 years! He started out on Church Street, then moved to Turn Table junction, and the last year + they found their forever location, in a rustic victorian house at 148 Main Street. Being born in Mexico, Librado has authentic roots and heart connected to his country. He came to the US when he was 18 years old, and has worked in restaurants his entire adult life. He started Viva Mexico with his father years ago, and since is the sole owner. His favorite at the restaurant is Mole. Mole comes from a family of sauces prepared throughout the Oaxaca and Puebla regions of Mexico and is characterized by a complex, layered flavor derived from intricate blends of dried chiles, spices, fruits, and seasonings. His son works with him at the restaurant. They love to be a part of the community and coming up with nightly specials is Librado’s personal favorite. “I love to create different dishes for our regular customers. It brings me great joy to prepare lamb, fish and ceviche ( along with many other specialties ) each night for our community” says Librado. They are BYOB and open Tuesday- Sunday. Closed Monday’s.
